Hello everyone! I don’t think I have ever been so happy that the weekend is here because it has been an incredibly busy past few weeks at work. My office recently had it’s national conference and our city was the hosting office this year. Was great to meet heaps of new people working for the organization but man was it tiring. I was pretty much smashed and cooking dinner was the last thing on my mind. Due to past experiences there are a couple of things I always make ahead and freeze so that I have no excuses to eat out. I think I have mentioned my love of freeze ahead dumplings in a previous post. The other thing I like to make in advance and keep in the fridge is pizza dough. And really, there is nothing better than the smell of freshly baked dough after a long day at work.

Hi everyone! Woops, it has been awhile. Work has gotten so so busy I simply cannot find to finish all the work I am meant to do. 90% of the time I feel like lying down on my office floor to do this –> . I don’t think it is quite appropriate so I have refrained myself from doing so. On the up-side, Nelson is back to it’s sunny warm days so I have started walking/biking to work again. This of course means that Spring is definitely here again. Ah, the birds are chirping, Sakura trees are blossoming and mooncakes start to appear in the Chinese shops signifying that Mid-Autumn Festival is just round the corner.
I love love love mooncakes especially the snowskin types.

I just whipped up a batch of these scrumptious scones today. As I started to butter one for afternoon tea, it hit me. I have yet to share the recipe with everyone here! I am sorry. Please forgive me.
I slightly tweaked the original recipe by adding more butter and a touch of vanilla. It is incredulously easy to make and the scones produced are out of this world. The texture is crumbly and so so sooo soft, it feels like you are biting into a dream. You can make it all fancy schmancy looking for a high tea or just roughly shape them for a rustic look. It works for both savoury and sweet too! Just check out the notes for the variations. These keep really well too by the way – if it lasts that long.
